This paper discusses efforts to grow edible fungi in submersion cultures as a substitute for seasonal mushroom harvesting. While Agaricus and Cortinellus berkeleyanus are cultivated on a large scale, Boletus edulis remains uncultivated. The most promising genus for flavor production is Morchella, whose mycelium can be cultured using sugar-based substrates.
