abstract
A review of applications of fungi in biotechnology from ancient times to present. Wine, beer, and cheese production dates back centuries, while commercial yeast and SCP production began more recently. Fungi are used to produce enzymes, acids, vitamins, antibiotics, and in steroid transformations. Genetic methods and DNA recombination are discussed.
